SHICHIDA Junmai Daiginjo
This is a beautifully smooth Daiginjo made from top quality Yamadanishiki at 45% polishing. The nose is an addictive soft cotton candy aroma and on the pallet one can enjoy a range of flavours such as banana and milk chocolate. All along, the sweetness is mild and subdued finishing clean with a little fruit and acid. This sake goes through a slight masculin transformation when enjoyed at room temperature. A 2012 Gold Medal winner at the Junmai Shu Awards in Japan. Pair with white fish sashimi and carpaccio, raw oysters, grilled salted white fish and tempura.
