In the wine world, grape types are really important when it comes to brewing the top quality wine, so we would like to do the same for our sake rice pick. The main theme of this sake is “Let’s brew Kyoto style sake from locally grown Kyoto sake rice”. We used relatively rare sake rice called Iwai rice for this sake. Its main characteristic is its elegant taste. It is pleasant to drink and it is a food friendly sake.“This sake has a lovely roundness of texture. It has a perfect balance of sweet and acid that represent the sophistication of a Daiginjo grade sake. It is best enjoyed at low temperatures from 8 to 10 degrees C.
