TAMAGAWA Junmai Ginjo Iwai

For the sweet tooth. “Iwai” (written with the character for celebration) is the name of a rare brewer’s rice variety, unique to Kyoto Prefecture. Large-grained and soft with the opaque “white heart” typical of true brewer’s rice, but difficult to grow, it passes out of production for some years before being revived in the early 1990s. Tamagawa’s interpretation blends “spontaneous fermentation” yamahai for a rich, sweet flavour. Happiest with savoury food, full of “umami”. Presenting a mild sweetness and an umami rich flavour with hints of dried fruit and spice, this sake is a true crowd pleaser.
